Simbhaoli’s Classic Oatmeal Cookies

1½ cups TRUST Golden Brown sugar
¼ cup TRUST Refined Table sugar
1¾ cups flour
¾ teaspoon baking soda
¾ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ lb. unsalted butter, softened
2 large eggs
2½ teaspoons vanilla
1 cup raisins
3½ cups old-fashioned rolled oats

Preheat oven to 375 F/ 190 C. Whisk together the flour, baking soda, baking powder, salt, cinnamon and nutmeg. Beat together the butter, TRUST Golden Brown Sugar, TRUST Refined Table Sugar, eggs, and vanilla. Stir the flour mixture into the sugar mixture until well blended and smooth. Stir in the raisins and the oats. |

| Drop the dough by measuring tablespoonfuls onto the sheets, spacing about 3 inches apart. With lightly greased hands, lightly press the cookies down to form ½ inch thick rounds. Bake, 1 sheet at a time, until the cookies are lightly brown all over and almost firm when lightly pressed in the center of the top, 6 to 9 minutes; rotate the sheet halfway through baking for even browning. Remove the sheet from the rack and let stand until the cookies firm slightly, about 2 minutes. Transfer the cookies to a wire rack to cool. |
