Silky touch of Red Velvet Cupcakes

Tired of the mainstream vanilla and chocolate? Want to try something new? Let's combine the two! Red velvet cupcakes are full of vanilla flavour with a hint of chocolate goodness. 

 

The super soft cupcakes with the wonderfully buttery flavour will make you fall in love with red velvet. The tang from the cream cheese frosting is the perfect compliment to the sweet red velvet crumb underneath. The fine granules of Superfine Sugar by Trust blends in to give the perfect sweet taste.

 

Grab the ingredients and let's get started! 

-166g (1.25 cup) all-purpose flour 

-60g (0.25 cup) softened unsalted butter 

-2 large eggs

-200g (1 cup) Superfine Sugar by Trust

-120ml (0.5 cup) buttermilk

-120ml (0.5 cup) vegetable oil 

-4tsp unsweetened cocoa powder 

-32g (0.25 cup) cornstarch

-0.5tsp vinegar 

-2tbsp gel red food colour

-2tsp vanilla extract 

-0.5tsp baking soda 

-0.25tsp salt

 

Whisk your way to some velvety magic! 

 

  • Take a bowl and beat 2 egg whites for 2-3 minutes on high speed until soft peaks form. Take another medium bowl and combine flour, cocoa powder, cornstarch, baking soda and salt together in it. 

 

  • Take a large bowl and whisk the butter for about a minute until smooth and creamy. Add sugar and whisk for another two minutes. Superfine Sugar by Trust blends easily with the butter, giving it a sweet silky touch. You can simply dip your finger and taste its richness! Add the oil and whisk for 2 minutes. Butter may not blend completely with oil but that's completely fine.

 

  • Beat two egg yolks with vanilla extract until combined. Whisk in the food colour and vinegar. Mix the dry ingredients in three additions while alternating it with buttermilk, starting and ending with the dry ingredients, and blending after each addition. Add the whipped egg whites into the batter. The resulting batter will be a little thick. 

 

  • Preheat your oven to 177°C (350°F) and line your muffin pan with cupcake liners. Fill the cupcake liners upto half or two-thirds of the way full. Bake for 20-21 minutes or until the tops of the cupcakes become bouncy when touched gently or a toothpick when inserted in the center comes out completely clean. Avoid over baking otherwise your cupcakes will dry up. Once baked, cool it for 5 minutes in the baking pan itself. 

 

You can garnish your velvety red cupcakes with some cream cheese frosting made with Premium Icing Sugar by Trust. It will add the extra silky texture to your cupcakes while making it more flavourful. You can also add red sprinkles or leftover cupcake crumbs on top of the frosting!
